  1. Preheat the oven to 190°C/170°C fan/Gas 5. Reserve 4 lemon slices and arrange the rest on a nonstick baking tray. Sit the fish on top and season.
  2. Arrange the tomatoes across the fish then top with a lemon slice. Drizzle with oil and roast for 30 minutes
  3. Meanwhile, boil the peas for 5 minutes. Add the spring onions to the pan for 10 seconds then drain.
  4. Whizz the peas and onions in a food processor with the fromage frais to make a soft, smooth purée. Top with the roasted fish and serve.
