Preheat your oven to 230°C.
Put a scallop in each of the shells. Pour olive oil onto each of the scallops and put all of the other ingredients into each of the shells, making sure the breadcrumbs go on last.
Put into the oven on a tray for 4-5 mins depending on size.
Tip: Keep the orange coloured roe on the scallop for extra flavour
