Turn the oven to 200 degrees
Chop Aubergine and pepper into desirable sized chunks. Chop tomatoes in half and mushrooms into quarters and set to one side.
Put aubergine and pepper into a medium sized oven proof baking dish and coat with half the oil, the curry powder, the black ground pepper and half the salt. Toss together with a spoon or hands to get an even coating on all the pieces.
Put in the preheated oven for 30 minutes.
After 30 minutes, add the chopped mushrooms and cherry tomatoes and coat with the remaining oil and salt. Toss and coat again.
Cook for a further 10 - 15 minutes until all the vegetables are soft and cooked.
Remove from the oven and serve as a side dish to a main course or as a small main meal.
