I remember making rock buns when I was at school. Really enjoyed making and eating them. These days I enjoy making them with the children.

Rub butter into flour. Add in sugar and currants. Mix in beaten egg and milk to form a soft and sticky dough.

Prepare a greased baking tin. Divide the mixture into 8 potion. Spoon each portion onto the baking tin. Use a fork to shape each bun like a rock.

Bake in the cenre of the oven 200C/ 400F/ Gas 6 for 15-20 minutes. Leave to cool on a wire rack. Dust with icing sugar before serving.

Other dried fruit can also be used. Rock buns are best eaten on the same day.

  • 100g butter
  • 75g Caster sguar
  • 100g currants
  • 1 egg (beaten)
  • 3-4 teaspoons milk
