Preheat the oven to 180C/350F/Gas mark 4. Grease and base line a 20cm cake tin.
Whisk together the eggs and sugar until they are thick and smooth.
Fold in the flour and apple slices.
Pour the mixture into the perpared tin and bake for 35 minutes, or until a skewer inserted into the middle of the cake comes out cleanly.
Remove from tin and dust with icing sugar.
Serve warm or cold with fresh cream or ice cream!
