Preheat oven to 180°C, 160°C fan, 350°F, Gas mark 4.
Line a baking tray with tin foil and place the salmon fillets on this.
Add bread crumbs and some orange zest into a bowl, stir and add 2tsp olive oil and parsley.
Squeeze the orange juice over the salmon fillets. Spread each one with mayonnaise. Put the bread crumb mix on to each fillet of salmon and bake for 20 minutes.
Meanwhile, boil the new potatoes for 15 minutes until tender. Boil the carrots for 12 minutes and
put the green beans on to simmer for 5 mins. Serve the fish together with the vegetables
