chop the stem ginger into strips place in a large bowl alongside 2tbs of the syrup. Chop garlic finely and add and add remaining ingredients to the bowl. Add the salmon fillets and cover, then season. Leave the salmon skin facing up then leave to marinate in the fridge in the bowl for half an hour. Then oven cook the salmon on a baking tray (on kitchen foik) for 12-15 mins, i used 200 for a fan oven. In the meantime put the left over sauce in a pan and simmer then pour over the salmon once ready and serve.
serve with noodles or rice and veg
