This is the first meal that my husband cooked for me and over the years it has become a firm favourite in our house.
Put the pasta in a pan and cook according to packet instructions.
Make the white sauce by heating the milk up gently. In a separate bowl mix the flour and olive oil together. Slowly add the warm milk and mix until the sauce has thickened.
Once the pasta has cooked add the white sauce and mix well. Add the garlic, smoke salmon, spinach, Italian seasoning and lemon zest and mix well. Mix in half of the parmesan and grate in some pepper.
Serve in bowls with the rest of the parmesan sprinkled on top.
This dish works using frozen spinach, and is great served with garlic bread
