Take a sheet of aluminium cooking foil and place the salmon fillet skin side down in the centre of the square.Use a seperate sheet of foil for each fillet
Drizzle each fillet with olive oil followed by a teaspoon of lemon juice.Top each fillet with a generous serving of green pesto.Season with freshly ground sea salt and black paper.
Fold the edges of the foil together to form a large parcel
Bake in a pre-heated oven 190c for 15minutes
Works best with fresh lemon juice but bottled works just fine.
