Just trying to find things that can be prepared quickly, easily without too much mess and are substantial but also reasonably healthy.

Put the whole side in a roasting bag or file. Sprinkle liberally with fresh or dried herbs (a persillade works well) of your choice and add a little white wine. Seal the bag/foil

Bake in the oven at about 180C for 20-25 minutes

When cooked, drain the liquid (there won‘t be a huge amount) in to a small pan, add a couple of tablespoons of creme fraiche and warm gently.

Cook the samphire in a wok with a small amount of oil and when nearly cooked (2-3 mins), add the spinach until lightly cooked.

Delicious, quick, fresh and simple. The softness of the fishness combines brilliantly with the salty crunch of the samphire and the earthy spinach. The light creamy sauce adds a slight richness. Serve with some new potatoes. A great light meal at any time of year and there should be some delicious left overs as well.
