Wash and dry the salmon steaks. On each steak sprinkle a little dried tarragon. Squeeze over a little lemon juice
Wrap each steak with two slices of Parma ham
Place in a baking tray and cook in a preheated oven 160C/140C fan assisted for twenty minutes.
In winter serve with Finest Cornish Butter Mash and peas. In summer serve warm or cold with salad
