Combine all the diced vegetables in a large mixing bowl. Add the lime juice, sherry vinegar, red chilli flakes and a generous amount of seasoning. Stir well to combine, then cover and allow to chill for at least 30 minutes.

Remove when ready to serve and allow to come to room temperature.

Serve on a bed of tortilla chips and with lime wedges to garnish.
