I got this recipe from my mum. I was surprised to see the mixture of salty peanuts with the sweet caramel and cheese. I baked for my daughter birthday to serve to parents. There wasn‘t enough left for myself - it was that popular!
For the base:
Whiz the peanuts, biscuits, 1 tbsp of sugar and 30 g of butter in the food processor. Mix well and transfer to the 8“ inch round tin. Press with a spoon to form a flat base. Bake in the over in 190 C or 180 C (fan) for 12 minutes.
Take out and put aside.
For a cheese filling:
Beat together 100 g of sugar and vanilla with 50 g of butter to form a creamy and fluffy mixture. Add 230 g of caramel from the tin (eg. Nestle Caranation) and mix well. Next add eggs and cheese spoon by spoon, mixing all the time. Add a spoon of flour at the end.
Transfer to the base. Bake for 45 - 60 minutes. After 30 minutes of baking you need to check if it is not to browned, if it is, cover with the foil. The cake will raise a lot, do not worry, it should be quite tall, sometimes might look like a soufflé when baked. Once baked, turn off the oven, open the door and leave the cake inside to let cool.
Prepare the glaze:
Heat up 170 g of caramel in the saucepan - add 3 tbsp of milk until it liquidize. Add 2 tbs of butter.
Take the cheese out of the cake tin. Cover with the glaze,sprinkle with almonds.
Store in the fridge. Make sure you don‘t invite too many guests as there won‘t be enough for you.
