Dice the vegetables into cubes, heat a saucepan with 1tbsp of oil and sauté the vegetables for 2 minutes. Butter one side of the toast and place under a hot grill to melt.
Once toasted; remove, turn over and spread with tomato sauce, make sure all the edges are covered with the sauce as this stops the edges of the bread getting burnt and ruining the flavour.
Once the vegetables are cooked spoon the mixture over the toast and tomato sauce divide the cheese evenly and sprinkle over the vegetables.
If using the meat, cut into small pieces and place on top of the cheese put it under the grill on a hot heat until it starts to bubble remove and serve with salad, beans or chips.
Always make sure the sauce goes over the edges of the toast.
Use medium sliced bread if wanting a lower fat content.
