Cream the butter and sugar together until evenly blended. Add the ground rice and flour and mix together until the mixture forms a dough ball. Wrap and place in the fridge to chill for 30 minutes.
Heat the oven to gas 3, 160°C, 325°F.
Remove dough from the fridge and roll out to approx 25 x 20cm (10 x 8in), then cut out shapes with a cookie cutter. Place on a lined baking sheet and cook in the oven for 10-12 minutes, until golden. Leave to cool.
Cut the passion fruit in half, remove the flesh and seeds and mix with the icing sugar. Spoon onto each cookie, spread over and leave to set. Decorate to taste.
