This recipe is a substitute for the traditional Unagi-don (Eel on rice) as sardines are easier to get hold of it works just as well!
Put Rice on to cook.
Coat both sides of the butterflied sardines with potato starch on a plate
Heat a small amount of cooking oil in a pan and fry sardines both sides till cooked and skin crisp
Turn off heat and absorb excess oil in pan with kitchen towel
In a small bowl, mix the soy sauce, sugar, mirin and sake.
Reheat the sardines in the pan and pour over the sauce
Serve over bowl of rice.
