Sausage and sweetcorn pie recipe

Make sure the sausages are sealed, and the mash is fluffy!

Preheat the oven to Gas 6, 200°C, fan 180°C.

Half fill a large pan with water and salt to taste. Add the potatoes and boil until soft then drain and mash, adding the milk and butter. While the potatoes are cooking, heat a large non-stick frying pan and fry the sausages to seal and brown them.

Carefully remove the sausages from the pan and cut into 2.5cm (1in) chunks and place in an ovenproof dish. Stir in the sweetcorn and beans and a little salt and pepper. Top with mashed potato, place in the oven and cook for around 40 minutes.

Remove the dish from the oven and carefully top the mash with the grated cheese. Place the dish back inside the oven until the cheese has melted and is golden in colour.

Serve with a bread roll if desired.
