Grill sausages for 10 minutes until browned, turning as needed.
Heat the oil in a large heavy based pan and fry the onion in the olive oil until softened.
Add the peppers and chopped tomatoes. stir in the tomato puree, if you like.
Add the beetroot and sausages and stir. Season to taste and cook for 15-20 minutes until sauce is slightly reduced and everything is piping hot.
Serve with mashed potatoes and a green vegetable of your choice (we like peas)
