Whisk the eggs in a bowl. Pour a tablespoon of egg into a pastry case, swirl around to coat the bottom and sides, and pour back into the bowl. Repeat with the other pastry cases (this ensures the sausage mix does not leak into the pastry). Put onto a baking tray and bake for around 5 minutes at 400F, 200C, or Gas Mark 6.
Meanwhile, put the sausage onto a plate, and use a fork to mash them. Cut cheese slices into ¼ in squares. Chop the basil and parsley, and reserve a teaspoonful for finishing. Put all of these ingredients, along with the salt and pepper, into the jug with the egg, and mix thoroughly.
Remove tray from the oven. Turn oven down to 350F, 175C or Gas Mark 4. Put a tablespoonful of the mixture into each pastry case and sprinkle the parmesan cheese over. Garnish with the reserved basil and parsley.
Bake for 30 minutes. Remove and place on a wire tray to cool. Eat cold for best flavour.
