Slice the potatoes thinly and par boil in lightly salted water for 5 min. The potatos should be cooked but still firm.
Fry the sausages, onions and mushrooms until cooked.
Beat the eggs with the milk and season well.
Chop the sausages into bite size pieces then add these with the onion and mushroom to the egg mixture and gently toss.
Heat the olive oil in a frying pan and pour in the egg and potato mixture, pressing it down to level the top.
Cook over a medium heat to allow the eggs to cook through.
Sprinkle cheese over the top and cook under the grill until golden and bubbling.
This is a great meal to help use up any left over veg or meat that you may have in the fridge. Feel free to substitute the sausage for your own favourites.
