Pre heat the oven to 180°C.
Boil the potatoes in salted water until tender, approximately 12 minutes. Once cooked, drain and mash.
Place the sausage meat into the bottom of a large oven proof dish. Cook the bacon and cut into strips. Layer the bacon strips on top of the sausage meat. Pour over the tinned tomatoes and layer the diced apple on top. Sprinkle over the oregano and grated cheese, season well.
Bake for 30 minutes or until piping hot and golden on top.
