Preheat your oven to Gas 4, 180°C, fan 160°C.
Place the sausages on a lightly oiled baking tin and cook in the oven for 20 minutes until nice and brown.
While the sausages are cooking, put a large pan of salted water on to boil.
Heat the olive oil in a large, deep frying pan and fry off the garlic then add chopped onion and mushrooms and cook until soft. Add the pasta to the boiling water and cook according to the packet instructions.
Add the tinned tomatoes to the onion, mushrooms and garlic and simmer to cook through and reduce the sauce. Stir in the mustard.
When pasta is cooked, drain and add to the pan of sauce. Chop the cooked sausages into large chunks and add to the pan. Mix everything well and serve.
You could accompany this dish with garlic bread.
