Place the onion, carrot, celery and sausage meat in a food processor and blitz to a paste.
Heat the garlic in a frying pan and cook the sausage meat with the oregano for 10 minutes. Add the passatta, balsamic, sugar and tomato puree and simmer for 10 minutes.
Meanwhile cook the pasta until al dente then drain, reserving 2 tbsp of the cooking water.
Mix the pasta into the sausage meat sauce, with the reserved cooking water and serve with pecorino cheese shavings, a green salad or garlic bread.
NOTE: use any type of sausage you like.
