Cut the mango into small chunks.
Heat a knob of butter in a frying pan.
Add the mango and brown sugar and fry for 5 minutes, stirring/turning occasionally.
Serve up immediately topped with a generous dollop of mascarpone cheese.
Tip for cutting mango - Cut the mango in half around the stone, then score it and then invert it to push the mango up and it can then be easily sliced off neatly.
