I love veg with a twist but being vegetarian I find that all too often side dishes are made interesting with the addition of meat. I discovered this recipe a few years ago and for me it makes a great addition to the Christmas table.
Blanch the Brussel sprouts in boiling water for 30 seconds and then drain.
Peel and finely chop the onion.
Heat the butter and fry the onion until golden brown.
Add the Brussel sprouts and cook for 8 minutes, stirring all the time.
Add the chestnuts and cook for a further 4 minutes.
Serve in a warm dish as an interesting accompaniment to a roast or Christmas dinner.
Season to taste.
