Separe the yolk, mix the white of the eggs till becomes very hard, after add 3 spoons of sugar and mix again for 2 min at max power.
Mix the yolk with 5 spoons of sugar and 3 spoons of oil. After add the flour, baking powder and mix all the ingredients together( white of the egg, the yolk composition and the flour, baking powder). Pour the ingredients in small tart tins and put it in the oven for 30 min, at 5 gas mark.
In the meantime, in a saucepan melt the brown sugar. When the sugar is melting add the water and leave it to boil till dissolves completely. When the composition is cold add the rum flavour ( or any other flavour at your choice),
After the cakes are cold, cut it in half,but not to separe it completely, add as much syrup , as you like ,and with a piping bag fill it with the whipped cream inside .
You can spread on top some straweberry jam.
Adding more sugar syrup will make the cake very nice and soft and I recommend to dip the cake for a few seconds to get the best results.
