I am diabetic and when it comes to Pancake Day I always feel a bit left out. So I came up with my own version of a pancake to suit me!
Beat eggs well until frothy. Add a splash of oil to frying pan, warm through and add eggs. Fry gently on both sides and slide on to a plate. Add whatever salad takes your fancy, ie.lettuce, sliced tomato, diced onion, chopped pepper, cucumber. Roll up and tuck in!
Nice with grated cheese, salad cream or mayo mixed in to salad before rolling up.
