This is another of my recipes to use up veggies and/ or meat.

Peel, wash and chop a variety of veggies, such as: carrots, suede, parsnips, green beans, baby corn, asparagus, sprouts, cabbage etc. It’s nice if you use a variety of colours if you can.

Fry gently with a little vegetable oil and set aside.

Cook two boil in the bag rice pouches according to the directions on the box with two vegetable stock cubes dissolved in the water.

Add the cooked rice to the veggies and fry again until rice and veggies are all crisp (you may need a little more oil).

Savoury Rice is a perfect dish to use up any left over veg, ones you have coupons for or those on ‘yellow sticker’! You could also add Quorn pieces or cooked chicken etc. if you wish.
