Put the rice into a large pan.
Add the red pepper, plum tomato and onion to the pan.
Pour in the stock and bring to the boil. Turn down the heat and simmer until all the stock has been absorbed and the rice is cooked.

  • 320g (10½ oz) - easy cook rice
  • red pepper, diced
  • plum tomato, diced
  • onion, finely chopped
  • 600-900ml (1-1½ pints) - chicken stock
