This is a light tasty starter perfect before any meal, its easy to make and looks impressive.

Put the bacon in a cold pan without any oil, on a low/medium heat, turn the bacon over after 5 minutes and cook for a further 5 minutes till crispy. Drain on kitchen paper. When cool break up into small pieces using your hands.

Heat the white wine vinegar in a small pan till it reduces slightly.

Add the water.

Add the egg yolks one at a time, whisking all the time.

Put the pan over a low heat and continue to whisk, pour in the melted butter a little bit at a time. When its thick and creamy its ready.

Season with salt, pepper and lemon juice to taste.

Add sunflower oil to a frying pan, when heated add the scallops and cook for 10 minutes, turning occassionally.

Heat a griddle pan. Toss the asparagus lightly in sunflower oil, cook for 5 minutes, turning occassionally.

Put three scallops onto a plate with two pieces of asparagus. Drizzle around the hollandaise sauce and sprinkle crispy bacon on top.

The hollandaise sauce can be put into a thermos flask to keep warm. A milk frother is handy for whisking when making the hollandaise sauce
