Made my first attempt at these at my wedding 7 years ago and they proved to be popular!
Peel eggs and put to one side
Divide sausage into 10 equal portions
Roll each egg in flour gently and with hands press a portion of the sausage around each egg
Dip sausage-wrapped eggs into the beaten eggs and then roll in bread crumbs, making sure they are completely covered.
Cook each egg in oil about 8 minutes or until sausage is cooked and browned.
Heat vegetable oil to 300 degrees
Cook each egg in oil about 7 minutes or until sausage is cooked and browned. Drain on paper toweling.
Serve on a bed of rocket leaves.
I prefer my scotch eggs warm, but they can be served cold too
