Bring a large pan of salted water to the boil. Add the tagliatelle and cook for 10 mins until just tender.
Heat the oil in a large pan and gently fry the onion for 5 mins untl soft.
Add the bacon and cook for 10-15 minutes until the bacon is fully cooked
Add a splash of red wine to the dish to marinate the bacon and red onion
Now add the eggs all at once, one after other and mix the sauce around until the egg is scrambled - add more butter and red wine if desired
Drain the pasta and add to the sauce with butter and chilli
Finally add a pinch of paprika and grate the parmesan over the dish and mix in
Serve in to a big pasta bowl, add extra parmesan on top and pepper if you desire and serve with a large glass of red wine!
I personally like my bacon a little crispy as I think it adds flavour and texture to the dish!
