Whisk the eggs together in a mixing bowl with seasoning. Melt the butter in a saucepan over a medium heat and add the eggs, chorizo and peas. Cook, stirring to break up the egg, until it is just set.
Spoon very carefully into the egg shells. Sprinkle the chives and black pepper on top. Serve immediately.
