Break the eggs into a bowl and beat with a fork. Season with salt and pepper.
Heat half the butter in a small frying pan over low heat. Place bread in the toaster.
Add the eggs to the pan and cook stirring with a wooden spoon for about 2 minutes or until just beginning to set.
Remove the pan from the heat. Spread the toast with the remaining butter and top with the scrambled eggs. Serve at once.
Make sure you don't over cook the eggs so they become rubbery. For a variation add chopped fresh chives or a sprinkle of cayenne pepper.
