Put 2 slices of bread into toaster. Put tofu, dried mixed herbs, salt, half a tablespoon of dairy free spread and soya milk into a pan. Scramble using a fork and heat until fully heated. When toast is ready, spread with remaining dairy free spread, top with hummous and the scrambled tofu mix.
Reduce or increase salt and herbs according to taste. Don't over scramble the tofu - allow larger pieces to stay intact so the texture resembles scrambled egg. You can use different varieties of hummous - pesto hummous is particularly nice.
