Pre-heat oven to 210°C and put kettle on to boil for the stock.
Take a large heavy bottomed casserole dish with lid and add a small amount of olive oil. Brown sausages for 5 mins and pop baking potatoes in the oven.
Whilst doing this chop the onion and all the vegetables into chunks. Remove sausages from pan and add chopped onion. Once the onion is soft and transparent and slightly brown add the vegetables and apples.
Let this mixture sweat for 5 minutes and return sausages to the pan. Add the chicken stock and stir, put lid on and put in oven for 45 minutes. 10 mins before it is ready add the cannellini beans.
Serve with buttery baked potatoes and green beans.
Pulses add flavour and are inexpensive additions to healthy family meals. Casserole dishes are great for these hob to oven meals. Garlic wards off colds and flus and the squash is full of beta carotene.
