JAP Sesamespinach He

Heat a dry frying pan and toast the sesame seeds, until just coloured. Grind the toasted sesame seeds in a pestle and mortar, then stir in the soy sauce, lemon and sugar and grind everything together.

Heat the oil in a large frying pan and cook the spinach over a medium heat until wilted. Squeeze out any excess liquid from the spinach, transfer to a serving dish and toss with the sesame dressing.
