Pour the oil into a large roasting tin, place on the hob on a medium to high heat and add the lamb to brown all over.
Add the chopped vegetables, stock and wine to the roasting pan, cover the whole thing loosely with foil and place in a low oven pre heated to 120C and leave it to cook slowly for about seven hours. It will be meltingly tender and delicious.
Serve with some cripsy roast potatoes and simple green veg. Its a great Sunday dish for the family because it is so simple to prepare and you can just leavce it to cook away while you get on with your day and the house gradually fills with the most fantastic and tempting smell.
