Good one to hide vegetables in. This used to be my childrens' favourite meal who said they hated carrots, as they grew up I let the know they'd been eating carrots for years and so they realised they liked them and started eating carrots on their own with other meals. Note any other vegetables can be used and I tend not to measure just cook and add what I have. Golden rule is when it's brown it's done and when it's black it's done for.
preparation, boil carrots until they are soft
whizz carrots with the chopped tomatoes in a food processor (with a little of the water the carrots were cooked in, save rest to add to cooking mince as required)
add frozen veggie mince to a large frying pan, add stock cube and sprinkle a few granules in. Soften with a little of the reserved carrot cooking water. Add the processed carrots and tomatoes.
Bring to boil and then simmer gently for about 20 minutes
Meanwhile, peel and boil the potatoes until soft. Drain and the mash.
Add mince to a casserole dish and top with mash potato. Put into the oven for 10mins.
