Wash and slice the cabbage into thin strips. Finely grate the carrots and coarsely chop some fresh coriander. Dice the apple into small pieces and wash and finely dice the spring onions.
Blend the mayonnaise, mustard, vinegar, salt and pepper and yogurt together in a large bowl. Add the cabbage, carrot, spring onions, and chopped apples and stir into the dressing ensuring the dressing is well mixed in and covers all the ingredients. Divide the mixture up into 6 serving bowls.
Shred the turkey and spread lightly over a bed of the coleslaw. Sprinkle with sesame seeds, garnish with some whole coriander leaves and serve.
