this recipe has been make by myself many of times and has never let me down! It has also led me to do many charity bakes and sell cakes at a local cafe.
place butter in a mixing bowl and mix till soft, to make this easier butter can be placed outside the fridge a few hours before baking.
add sugar and stir till all mixed in.
add the self raising flour until the mixture looks like bread crumbs.
next whisk eggs in a seperate bowl and add a little at a time to the original mixture, this will add a much air as you can to the cake making it light and fluffy.
place mixture into a grease proof baking tin and cook of gas mark 4 for around 30 minutes.
once your cake has been cooked and allowed to cool sprinkle with a little icing sugar and enjoy!
