Preheat the oven to 200 degrees or 180 for fan oven.
Once the oven is hot, put the oil in a roasting dish and place in the oven.
Peel, wash and chop the potatoes.
Peel the garlic then gently squash, but leave them whole.
Take the oil from the oven, carefully add the potatoes, being very careful as the oil is extremely hot. Add the garlic, bay leaves and salt. Mix it together, coating with the oil. Place in the oven.
At 10 and 20 minutes, take the tray out and turn the potatoes, making sure everything is still well coated in oil.
When the potatoes are cooked around 30 minutes depending on how big you cut them and the efficiency of your oven, remove them from the oven.
Take out the bay leaves and garlic (although you may eat the garlic if you wish). Serve with whatever dish you would like some tasty potatoes with.
*I squash my garlic with the side of a large knife, but you could also use the back of a spoon.*
