Skye‘s Scrummy Yummy Nosh recipe

My little girl loves risotto and has done since she was a baby. She really likes flavoursome food and won‘t eat anything that‘s bland, which counted out most of the baby risotto meals. So I decided to take to the hob and create something especially for he

Heat the oil and add the rice making sure all the grains have been coated (this helps it to absorb the stock and flavours). Kepp this on a medium heat.

Add around a table spoon of stock and stir it in, adding the peppers, tomatoes and olives. (This makes sure the flavours are absorbed)

Once that stock has been absorbed, add a little more also adding the garlic puree, salt, pepper and basil.

Once the stock has been absorbed add a little more and stir occassionally, keep repeating until all the stock has been used.

serve and sprinkle with some parmesean for added flavour.

  • 100g Arborio risotto rice
  • 350ml Vegetable stock (heated)
  • 1 Red pepper (Diced)
  • 4 Sundried Tomato (Diced)
  • 16 Black olives (sliced)
  • 2 tsp garlic puree
  • pinch salt
  • sprinkle Freshly ground black pepper
  • 2 tsp Basil
  • 2 tbsp Extra Virgin Olive Oil
