HE SLAWSALAD

Place all the vegetables into a large bowl, except the peanuts, sesame seeds and chilli. In a separate bowl mix together the peanut sauce, lime zest and juice and coconut cream. Pour the sauce over your raw vegetables giving everything a really good toss making sure everything gets a good coating. Finish off by scattering the peanuts over the slaw and serve at room temperature.

  • 2 large carrots, using a speed peeler to create ribbons
  • 4 spring onions, cut on the angle in thin slices
  • ½ savoy cabbage, finely sliced
