Cut the beef into thin slices, 2 inches long. Put in a bowl and add the marinade and leave for 30 minutes. Heat a wok over a high heat until very hot and then add 2tbsp of groundnut oil. When slightly smoking, add the beef from the marinade. Stir-fry for 3-5 minutes, until browned. Remove and drain on kitchen roll.
Wipe the wok clean and add the remaining 1 tbsp of groundnut oil. Heat the oil and then add the ginger, shallots and garlic and stir-fry for 20 seconds. Add the peppers, soy sauce, dry sherry, salt, pepper and sugar and stir-fry for 2-3 minutes.
Return the beef to the wok and stir-fry for 3-4 minutes. Serve with fresh basil and an egg noodle stir fry.
