Don't be tempted to do this with a leaner cut of meat. It won't have the fat to make the meat moist, and will quickly dry out.

This is a stunning but simple recipe, perfect for feeding a crowd. It looks like a hassle, but once it's in the oven you can forget all about it.

Take your pork and season well all over, rubbing salt and pepper into the skin and the flesh.

Place in a large roasting tray skin side up, and put in the oven at 220°C.

After half an hour it should be starting to crackle, and smelling great. Turn the oven right down to 140°C, and leave the pork for another 5 hours.

Check regularly to check it's not burning, and once the meat is soft and tender remove from the oven. Rest for at least 20 minutes, and up to an hour, while you roast your potatoes and cook your veg.

Serve at the table in a large platter, letting everyone tuck in. You should be able to pull the meat apart with a fork!
