Heat the oil and fry together the onion, peppers, mushrooms, garlic and chilli.
Once softened add the tins of chopped tomatoes, stir well and leave to simmer.
After 10 minutes, add finely chopped basil and stir well.
Leave the mixture to simmer for 20 minutes, stirring regularly to stop the mixture sticking.
Squeeze half of lemon juice into the mixture and season with black pepper and salt if required.
Remove the lid to reduce for 5 minutes.
Serve with homemade garlic bread or pasta.
Use the sauce for bolognese - fry off pork mince and add sauce.
Use the sauce for cold tomato pasta - add more basil when cold - perfect for summer evening salads, or a quick lunch.
Sauce reheats well for a few days.
