Smoked Fish Omlette

My husband and I both lost over 4 stone each following the Ducan Diet 2 years ago. We managed to lose and keep the weight off enjoying recipes like this.

Place fish in frying pan and just cover with milk. Poach gently till cooked and just able to break up.

Whilst fish is poaching, separate the eggs and whisk the whites until soft peaks. Also put the oven to the grill setting to heat.

Drain the cooked fish, remove the skin and break into pieces.

Mix the fish with the egg yolks, crème freche and season.

Fold the egg whites gently into the mixture.

Pour the mixture into a non stick frying pan and grill for approx. 5 minutes. It is ready to serve when the omelette has puffed up and nicely browned on top.

For extra taste sprinkle grated parmesan over the mixture before grilling. Perfect served with a crisp salad.
