This beautiful, tender ham is topped with fresh parsley, fiery chilli and Parmesan for a deliciously flavoursome crust. The perfect addition to your Christmas platter this year.
Heat the oven to Gas 4, 180°C, 350°F. Mix together the finely chopped parsley, chillies, Parmesan and mustard seeds. Lightly whisk the egg white and mix in.
Place the gammon in a lightly oiled roasting pan and spread the parsley mix all over the ham. Put in the lower part of the oven and bake for 30 minutes. When cooked rest for 10 minutes and serve.
