Smoked mackerel pâté

Remove skin (and bones if any) from the mackerel fillets and flake into blender bowl, add all other ingredients and blend together.

Taste and adjust seasoning if necessary. Turn out into a suitable dish, decorate with bay leaves if you have them and refrigerate before serving.

Impresses many people, even those children who normally don't like fish and is suitable, if served without bread, for a low carbohydrate diet too!

  • 150g well softened butter
  • 150ml double cream or crème fraîche
  • 1 zest and juice of lemon
  • freshly ground sea salt and black pepper, to taste
  • optional bay leaves, crushed red peppercorns
